Pie anyone?

I brought back a case of peaches from BC and they are all now ripening at the same time.
I've got a helluva lot of peaches to do something with. So I'm gonna make a bunch of pies. It'll keep me occupied and they'll be damn good.
I could freeze them but it seems like a waste of delicious, in season peaches...
Anyone got any ideas for something good with peaches??

You could make peach jam, or peach crumble... I wonder if you could make a peach bread (sort of like banana bread)...peach salsa...peach chutney...

Can you tell I love peaches? I'm a big fan of having them in my oatmeal every morning.

I haven't tried this one, but it has a 5 star rating and is Ina Garten's so it's got to be good

Fresh Peach Bellinis

2 ripe peaches, diced
1 tablespoon fresh lemon juice
1 teaspoon sugar
1 bottle chilled prsecco sparkling wine

Place the peaches, lemon juice, and sugar in a food processor and process until smooth. Press the mixture through a sieve to get the solids out.

Place 2 tablespoons of the peach puree into each glass and fill with cold prosecco.
